The BBQ pineapple burger is sure to tingle the taste buds. A well seasoned beef patty topped with homemade pineapple BBQ rings, its the perfect sweet and savoury flavour combination.

Ingredients
For the sauce
200ml pineapple juice
4 tbsp soy sauce
2 tbsp cornstarch
4 tbsp Ketchup
2 tbsp honey
1 tsp Worcestershire Sauce
1 tbsp black treacle
1tsp garlic
1 tsp ginger
Pinch chilli flakes
For the burger
½ gem lettuce
½ red cabbage, chopped
2 limes, juiced
½ tbsp oil
Chilli flakes
2 burger patties of you choosing
2 slices Monty Jack cheese
2 rounds of pineapple slices
2 tbsp mayonnaise
Process
Place all the ingredients in to a sauce pan (off the heat) and mix together until smooth.
Begin to bring the saucepan to a boil and continue to mix. Once boiling reduce to a simmer until the sauce becomes thick in consistency.
Tip- if the sauce becomes too thick, add more pineapple juice, if to thin add more cornstarch
Pour into a clean jar whilst hot, allow to cool before placing on the lid and placing in the fridge.
Method for the Burger
Begin to warm the grill to a medium heat. Put the cabbage in a bowl and pour over the lime juice, oil and add some chilli flakes.
Begin to grill the burger patties, we chose beef but you can choose any to meet your customer’s dietary requirements. Once the patties are nearly cooked, add the rings of pineapple to the grill pan. Grill each side for 2 minutes.
To assemble, take the base of Kara’s Brioche Style Bun and spread with mayonnaise, top with the baby gem lettuce and zesty cabbage slaw. Add your cooked burger patties and grilled pineapple slices. Finish with the flavoursome bbq pineapple before placing on the lid of the bun.
Serve with gastro chips.
